French toast triangles

This quick and easy recipe is perfect for breakfast or any time of the day. Use wholemeal bread if you can as it’s a good source of fibre.

Ingredients

  • 1 large free-range egg, plus 1 yolk
  • 150ml full fat milk
  • 4 thick slices wholemeal bread, cut into triangles
  • 25g butter
  • 1tsp olive oil
  • 1tbsp golden caster sugar (optional)
  • Pinch cinnamon (optional)
  • Freshly squeezed orange juice

Method

  1. Put the egg, yolk and milk in a wide shallow bowl and whisk. Dip the bread into the mixture.
  2. Heat half the butter and oil in a pan, add a few slices of bread and fry for 2 mins until browned, turn over and cook for another 2 mins. Cook the remaining bread in the rest of the butter and oil.
  3. Put the sugar and cinnamon into a small bowl and mix.
  4. Sprinkle the cinnamon mixture over the eggy bread.
  5. Serve with fresh fruit such as strawberries, blueberries and raspberries and a glass of fresh orange juice.
