Packed with flavour, this yummy favourite should go down a treat with the whole family.

Ingredients

  • 4 eggs
  • 200g light soft brown sugar
  • 175ml sunflower oil
  • 100g self-raising flour
  • 100g wholemeal self-raising flour
  • 5 carrots, finely grated
  • 1tsp mixed spice (or cinnamon)
  • 150g mixed dried fruits, such as cranberries, raisins, apricots
  • 200g cream cheese
  • 60g sieved icing sugar
  • 1-2tbsp of milk

Method

  1. Grease and line an 8” x 12” rectangular cake tin.
  2. Whisk the eggs and sugar until thick and frothy. Slowly whisk in the oil. Sieve both flours and add to the egg mixture, together with the remaining ingredients. Stir and spoon the mixture into the prepared tin and level.
  3. Cook in a preheated oven (180ºC/350ºF/Gas 4) for 20-25 mins, until firm to touch and a light golden brown colour. Leave to cool for a few minutes and then turn out of the tin.
  4. If you would like to ice the cake, mix 200g cream cheese with 60g sieved golden icing sugar and a tablespoon or two of milk. Carefully spread over the cake before slicing.
