Sausage pasta with olives

Serves: 2-4
A hearty dish that’s great for all the family. Don’t let the wine put you off, the alcohol is burnt off in the process, making it toddler friendly.
Ingredients
- 2tbsp olive oil
- 1 onion, finely chopped
- 1 clove garlic, peeled and crushed
- 6 good quality sausages
- Glass of red wine – if you have a bottle open
- 400g tinned chopped tomatoes
- Handful of olives, stoned removed
- Handful fresh parsley, chopped
- 1tsp light soft brown sugar
- 400g penne pasta (or other pasta of your choice)
Method

Heat the oil and fry the onion and garlic until soft, this will take about 10 minutes. Transfer to a plate.

Squeeze the sausage meat out of the skins and add to the pan, you may need to add a little more oil to the pan if there is none left after the onions. Fry the sausage meat for 5-10 minutes until the sausage is lightly browned.

Add the wine if you have some opened and leave to bubble away for a few minutes.

Add the tinned tomatoes, olives, parsley or rosemary and sugar and simmer gently (uncovered) for 15 minutes. You may need to add a little water to loosen the sauce slightly.

Meanwhile bring a large pan of water to the boil. Add the pasta and cook according to the packet instructions.
