Sweet & Sour vegetables with chicken

Ingredients
- 2 carrots, peeled
- 2 sticks celery, trimmed
- 1 orange pepper, seeds removed
- 1 onion, peeled and finely chopped
- 1tbsp vegetable oil
- 500g skinned chicken (breasts or thighs), cut into thin strips
- 3tbsp red or white wine vinegar
- 4tbsp tomato purée
- 2tbsp light soft brown sugar
- 1tsp mustard powder
- 2tbsp soy sauce
- 432g tinned pineapple pieces in juice
- 3tbsp cornflour
Method

Cut the carrots, celery and pepper into short strips.

Heat the oil and fry the veg for five mins, until the onion is soft. Remove from pan. Fry the chicken in batches until golden all over, then return veg to pan.

Mix together the vinegar, tomato purée, light soft brown sugar, mustard powder and soy sauce with the strained pineapple juice, then add 200ml water.

Pour over the chicken and vegetables, and simmer gently for 10-15 mins, until the chicken is cooked. Blend the cornflour with a little water, add to the pan with the pineapple and cook for a few more minutes until the sauce thickens slightly. Serve with rice, noodles or tortilla wraps and green beans.
