Barbecue chicken

Makes: 8 pieces of chicken
Also makes great snacks for little mouths as the chicken can be served on its own in strips or in sandwiches. For a more filling meal, serve with potato wedges.
Ingredients
- 8 pieces chicken, skinned
- 2 red onions, chopped
- 8tbsp tomato ketchup
- 2tbsp soft, dark brown sugar
- 1tbsp grainy mustard
- 1tbsp Worcester sauce
- 1 clove(s) garlic, crushed
- 1tbsp olive oil
- Lettuce
Method

Score each piece of chicken. In a large bowl, mix all the other ingredients together (except the oil).

Add the chicken to the mix, stir, cover and leave in the fridge to marinade for 30 mins.

Heat the oil in a roasting tin, add the marinated chicken and cook in a preheated oven (200°C/400°F/gas mark 6) for 40-50 mins or until the chicken is cooked through.

Serve with wedges and mange tout.
