This is a quick, simple and delicious dish, ideal for eating during pregnancy.

Ingredients

  • 2tbsp olive oil
  • 2 spring onions, finely sliced
  • 1 clove garlic, crushed
  • 4 rashers bacon, chopped
  • 200g basmati rice
  • 400ml vegetable stock or chicken
  • Large handful of herbs
  • Large handful cashew nuts, chopped
  • 150g green beans

Method

  1. Heat the oil in a saucepan, add the onions, garlic and bacon and cook gently for 5-10 minutes until soft.
  2. Add the rice and stock and cook for 11 minutes until the rice has absorbed the stock. Take off the heat and leave to stand for 5-7 minutes until the rice is fluffy.
  3. Cut the beans in half diagonally widthways and steam until just tender.
  4. Add the beans to the rice with the herbs and cashew nuts. Mix everything together and serve.
