This quick and easy stir fry is a perfect pregnancy dish.

Ingredients

  • 250g egg noodles
  • 4 large field mushrooms
  • 1 broccoli head, cut into small florets
  • 2tsp sesame oil
  • 2tbsp sunflower oil
  • 1tbsp clove garlic, chopped finely
  • 1 inch piece ginger, peeled and chopped finely
  • 2 pak choi, sliced into strips
  • 1tbsp soy sauce
  • Handful of cashew nuts
  • Large handful fresh coriander, chopped

Method

  1. Bring a large pan of water to the boil and cook the egg noodles according to the pack instructions. Drain.
  2. Halve the field mushrooms and then cut each half into slices. Cut the broccoli into small florets. Slice some of the broccoli stem too – it tastes good stir fried. Shred the pak choi into big strips.
  3. Heat a wok or large frying pan until very hot, add the oils and add the garlic and ginger and stir fry for about 30 seconds. Add the mushrooms and broccoli and stir fry for 2 minutes.
  4. Add the pak choi, cooked noodles, soy sauce, cashew nuts and fresh chopped coriander. Mix everything together and heat through for 1 minute.

Additional Information and Tips

The handful of cashew nuts added towards the end adds some extra protein – add just before you have finished cooking.
